Veggie Rice Palau
A Palau originates from the Middle East but is adopted by Indians. Also known as Palau, Pilaf and Biryani. My mom used to make this dish all the time when we were growing up as kids. This classic recipe has been simplified and delicious without any oil - you’ll want to make time and time again. You can substitute any vegetable of choice instead of green peas and carrots. With plenty of flavour, this tasty side dish is perfect for serving with daal or a curry like cauliflower tikka masala.
Ingredients
2 cup basmati or long grain rice
4 cups water
1 tsp cumin seeds
2 bay leafs
2 cinnamon sticks
2 cardamoms
2 cloves
1 cup frozen carrots diced
1 cup frozen green peas
1 tsp grated ginger
1 tsp salt
1/2 tsp garam masala
1 tbsp lemon juice
2 long sliced green chilies optional
2 tbsp finely chopped cilantro for garnish
Instructions
In a pot add all the ingredients except water and rice. Add cumin seeds, cardamoms, cloves, bay leaves, ginger, carrots, green peas, ginger, salt, garam masala, lemon juice and stir for few seconds.
Let the vegetables cook for a few minutes till vegetables are tender.
Next wash the rice and add to pot. Stir-fry for 2 minutes.
Add water to pot and bring to a boil and turn the heat to low. Cover the pan. Cook about 15 minutes, or until the rice is tender and the water has evaporated. Add cilantro and green chilies and mix. Turn off the heat and fluff the rice with a fork. Enjoy!
