Vegetable Biryani

Biryani is a very traditional Indian Hyderabadi dish. It is aromatic and rich, rice-based food made with spices, saffron, basmati rice and vegetables that is cooked on very slow flame in a sealed pot.

Ingredients

  1. 1 onion chopped

  2. 2 cloves garlic crushed

  3. 2 ½ teaspoons curry powder

  4. ¾ teaspoon cinnamon

  5. ¼ teaspoon cloves

  6. 2 ¾ cups water

  7. 2 carrots thinly sliced

  8. ½ cauliflower broken into florets

  9. ½ cup raisins

  10. 1 cup uncooked brown rice

  11. 1 cup peas fresh or frozen

  12. 1 tomato chopped

Instructions

In a large pan, cook onions and garlic in ¼ cup of the water for 5 minutes. Add curry powder, cinnamon, and cloves, cook 2 minutes.

Add the remaining water, carrots, cauliflower, raisins, and rice. Bring to a boil. Cover, reduce heat, and simmer about 40 minutes.

Stir in peas and tomatoes. Cook an additional 15 minutes. Serve hot. Enjoy with some tomato chutney.
