Vegan Eggnog

Drinking Eggnog is a tradition in many households around the holidays,, but unfortunately, most traditional Eggnog is made with ingredients that are high in saturated fat and cholesterol. To keep it healthy, we came up with a refreshing vegan version using almond milk, dates, bananas and oats- plus some spices and extracts to keep those traditional flavors alive. We like to add a tablespoon of neutral-tasting nut butter such as almond or cashew.

Ingredients

  1. 1.5 cups almond milk

  2. 1 ripe banana

  3. 2 large fresh dates pitted

  4. 3 tbsp. rolled old-fashioned oats

  5. 1 tbsp. cashew or almond butter optional, for extra creaminess

  6. 1/2 tsp. grated nutmeg

  7. 1/2 tsp. ground cinnamon

  8. 1/2 tsp. vanilla extract

Instructions

Combine all ingredients in a high speed blender and blend until smooth. Pour into glasses and serve immediately, sprinkled with grated nutmeg.
