Red Lentil Daal Soup with Carrot and Potato

This Red Lentil - Daal Soup with Carrot, Sweet Potato, and Moroccan Spices is a crowd pleaser. Super easy to make in a one pot slow cooker. Put all the ingredients together plug it in and it’s ready. Enjoy with rice or bread or quinoa. This is a staple in our household and we cook a big pot weekly.

Ingredients

  1. 1 large yellow onion chopped

  2. 2 large sweet potatoes or regular potatoes peeled and chunked

  3. 3 to 4 large carrots peeled and chopped

  4. 1 cup red or yellow lentils

  5. 6 cups vegetable stock or water

  6. 1 tablespoon cumin

  7. 1 teaspoon turmeric

  8. 1 teaspoon red chili powder

  9. 1 teaspoon ginger garlic fresh or powder

  10. 1/2 teaspoon Coriander and cumin seeds

  11. Squeeze lemon on top

  12. Cilantro for garnish

Instructions

Brown the onions in water for 6 to 8 minutes until soft and translucent.

Add the remaining ingredients to slow cooker and spices except for garnishes.

Let cook on slow simmer for 2-3 hours or all day until the potatoes, lentils, and carrots are soft.

Let the soup cool a little and blend it with an immersion blender until smooth and creamy.

TASTE the soup. Add more spices salt and pepper as needed.

Ladle soup into bowls and garnish with some cilantro.
