Quinoa & Mushrooms with Walnuts

Quinoa is one of the world's most popular health foods. Quinoa is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. It is also high in fiber,magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. It is so easy to cook and can make many different dishes with it. This grain is something you can make during meal prep on the weekend and add different ingredients throughout the week.

Ingredients

  1. 1 medium carrot chopped small

  2. 1 medium onion chopped small

  3. 6 button mushrooms sliced thin

  4. 2 cups water 1 cup quinoa soaked 5 minutes, rinsed and drained

  5. 1/2 teaspoons black pepper

  6. 1/2 teaspoon dried rosemary

  7. 1-2 Tablespoons soy sauce* or coconut aminos

  8. 1/2 cup chopped walnuts

  9. 1/4 cup chopped fresh parsley

Instructions

Heat water in a saucepan over medium-high heat. Add onion, celery, and carrot and stir about 5 minutes.

Add mushrooms and continue stirring 1 minute.

Stir in quinoa, water, pepper, rosemary and soy sauce.

Cover and bring to boil. Then turn down heat and simmer 25 minutes.

Toss cooked quinoa in a bowl with walnuts and parsley.

Serve hot or cold. Enjoy!
