Egyptian Fava Bean Mash Dip
Fava beans, when in season during the spring and summer months, can be a fantastic main ingredient for a cool and refreshing dip to serve to company at a picnic or lunch or dinner event. They are readily available at many farmer's markets.
This dip is terrific for Meatless Monday option and can be eaten with pita wedges, but you can also use it as a dip for vegetables, pita chips, or bread. Like other starchy purées, this will stiffen a bit after it sits, so if using as a dip, you may want to add a little lemon juice, or just a spoonful of water to loosen it. The purée will keep in the fridge for up to 3 days.
Ingredients
1 tablespoon water
2 garlic cloves
1 onion chopped
1 ⁄4-1⁄2 cup tomato sauce
1 teaspoon ground cumin
1 ⁄2 teaspoon ground coriander or more
1 ⁄8 teaspoon hot paprika
1 ⁄2 teaspoon salt optional for taste
3 cups boiled fava beans
Instructions
Heat water in pan, add garlic, onion and cook for about 4 minutes.
Add tomato sauce, spices and salt, cook for 2-3 minutes.
Add fava beans, and mash very well it on low heat.
You can mash it finely or leave some fava beans whole.
Cover and cook for 5 more minutes.
Serve with pita bread.
Recipe Notes
Serve with your favorite veggies -I used raw, thinly slice beets but carrots, peppers, cauliflower, Belgian endive leaves, asparagus spears -pretty much any vegetable will work really well.
This also works well as a spooned onto your plate, underneath your salad, spread into a collard wrap, or really, anywhere that you might use hummus.
