Celebrating Mother’s Day with Healthy Recipes

 “If you can DREAM it YOU can achieve it”, said my mother to me many years ago when I was a child! Every year during Mother’s Day I think about my mom a lot. She’s no longer with us, she passed away 28 years ago at a young age with kidney disease and heart failure. I learned everything from my mom from cooking, entertaining, stitching, gardening, cleaning, organizing and so many other day-to-day skills. I am so happy that she taught me these life long skills to use daily. My mom passed away when my first born was only 6 months old, so he didn’t get to spend any time with her. Below are some pics of my mom at my wedding and with my baby.

I have two grown boys now and one recently got married. So I have acquired a daughter-in-law and am blessed. My children love me dearly and spoil me not just on Mother’s day but everyday. I have taught them wonderful skills and values from my mom.

I am grateful for what I have and the health knowledge we share with others. We love entertaining other families in our home – it’s a great way to develop friendships, stay connected and teach them about healthier plant-based eating. We are passionate about a healthy lifestyle, working out and staying fit. We are passionate about spreading the message about this healthy lifestyle. It has been a rewarding experience to feel connected to the foods we eat. Our goal is to provide motivation, practical guidance and a support system to profoundly improve people’s lives. Have you ever wondered how Mother’s Day became a national holiday?

The modern-day Mother’s Day was created by Anna Jarvis. She wanted to carry out her mother’s wish of being able to have a day dedicated just for mothers. On May 8th, 1914 President Woodrow Wilson signed a Resolution designating the second Sunday in May as Mother’s Day. This is how Mother’s Day in the U.S. became a national holiday.

So, what should you get your mother this year? Should you send a greeting card or send some flowers? How about cooking her a meal at home using our recipes below. This will show your precious mother how much you love her.

Roasted Cauliflower, Chickpeas and Avocado Perfect Snack – This Italian-inspired warm, roasted cauliflower, avocado and chickpea salad makes a hearty main course salad or the perfect side dish to any celebration.

Citrusy Tangy Thai Salad – This salad is perfect for warm summer days or anytime of the year. You can substitute any citrusy fruit for oranges, and use any leafy greens for the base. The dressing is delicious, you can leave the peanuts out if you are allergic to nuts.

Can’t Beet the Apple Kale Quinoa Salad – This apple, beet, kale salad is perfect for anytime. You can add apple or any other fruit you have in the house. If you don’t like a fruity salad feel free to add sweet potatoes or left over veggies!

Couscous with Chickpeas and Mint – This delicious couscous salad is ready in 15 minutes and contains whole wheat couscous, chickpeas, mint and aromatic indian spices. It is vegan and it is gluten-free. Adding the chickpeas to this dish adds more flavor and it is filling. The garam masala adds a nice kick to the flavor and tastes very rich and nutty.

Shepherd’s Vegetable Pie – There is something very comforting about Shepherd’s Pie. The warm hearty vegetables in a soupy sauce topped with fluffy mashed potatoes, all baked to bubbly perfection. So Yummy!

Chickpea Veggie Omelette – This tasty vegan recipe is great for weekend brunches. Ready in just 30 minutes, it’s an excellent way to use up leftover vegetables. Onions, mushrooms, bell peppers, broccoli, and asparagus are particularly good in an omelette, but almost any leftover veggies will work well here.

Date Ball Truffles – Nutty date truffles are a sweet ‘’pick-me-up’’ treat that is naturally sweetened with dates without adding sugar. You just won’t believe how good they taste and how easy to prepare they can be.
