Cauliflower & Green Peas (Aloo Gobi Matar Kheema)

Aloo gobi matar kheema is an Indian curry made with riced cauliflower and green peas. It’s ready in 20 minutes and so tasty can be eaten with wheat pita or brown rice.

Ingredients

  1. 1 pound cauliflower or 1 frozen bag of organic riced cauliflower

  2. 4 cloves of garlic peeled

  3. 1/2 onion peeled and chopped

  4. 1/4- inch piece of fresh ginger

  5. 2 tbsp tahini optional

  6. 2 tsp turmeric powder

  7. 1 tsp cumin powder

  8. 1/4 tsp cayenne powder

  9. 1/8 tsp ground black pepper

  10. 1 cup frozen peas

  11. 1/2 cup cilantro

Instructions

In the food processor shred the cauliflower until fine if you didn't buy the pre-made frozen rice cauliflower.

In the meantime, add the garlic, onion, ginger, cilantro and tahini to a blender and blend until smooth.

Add the mixture and the spices (turmeric, cumin, cayenne and pepper) to a large pot, stir and cook covered over medium-high heat for 5 minutes.

Add the cauliflower and frozen peas and cook for 5 minutes or more.

Finally, stir and serve. Garnish with parsley, eat with brown rice or wheat pita. Enjoy!

Recipe Notes

Use the veggies and spices you prefer there are so many variations to this dish. Leave out the cumin and cayenne if you don't like it spicy.
