Breakfast for a crowd is fast and no-sweat with these easy-fix pancakes that can be served right from the sheet pan. Just cut small circles out of the banana nut bread and add fig jam and fresh berries.

1/2 cup vegan palm sugar
1 1/2 cups mashed ripe bananas
1 teaspoon vanilla
1 teaspoon apple cider vinegar
2 cups oat flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts if desired

1/2 teaspoon salt

Instructions
Heat oven to 350° F. Grease bottom only of 9 x 5 x 3-inch loaf pan.
In large bowl, beat sugar, bananas, and vanilla until smooth.
Stir in almond milk and vinegar. Add flour, baking soda and salt; stir just until moistened.
Stir in walnuts. Pour into pan. Bake for 1 hour and let cool! Enjoy!!
